Good fried rice starts with the rice itself. We use chilled, day-old rice so the grains stay firm and separate in the wok rather than steaming into clumps. It goes in over a high flame with diced chicken, egg, onion, carrot and peas, and is kept moving so everything takes on heat evenly and the rice picks up the faint smoky char known as wok hei.
