About Our House Special Crispy Noodle

Crispy noodle is a Cantonese classic that lives or dies on the frying. We spread thin egg noodles into a flat cake and pan-fry them on both sides until they set golden and crisp, holding their shape when the topping goes on. Fried too little they go limp under the sauce; fried too long they turn hard. Ours are cooked to order so they land on the table at the right moment.

The topping is wok-tossed separately and finished with a light savoury gravy: seafood, crisp gai lan and sliced mushrooms, seasoned simply so the ingredients stay distinct. Pour it over and let it sit for a minute and you get a plate where the centre goes tender and the edges stay crackling. Share it across the table or keep it as a full meal for one.
